Vegetable Skewers with Chili & Peach BBQ Sauce

These Chili & Peach BBQ Vegetable Skewers are a delightful blend of sweet and spicy flavors, perfect for grilling season. Tender vegetables are threaded onto skewers and basted with Jissie Sussie's homemade chili and peach barbecue sauce, creating a deliciously caramelized exterior with a juicy, flavorful interior. Whether you're a vegetarian or simply looking to add more veggies to your barbecue spread, these skewers are sure to be a hit!



Ingredients:

  • Assorted vegetables (such as bell peppers, zucchini, mushrooms, cherry tomatoes, and onions), cut into bite-sized pieces

  • Wooden skewers, soaked in water for 30 minutes


Instructions:

  1. Preheat your grill to medium-high heat.

  2. In a small saucepan, combine all the ingredients for the Chili & Peach BBQ Sauce. Bring to a simmer over medium heat, stirring occasionally, and cook for about 5 minutes until the sauce has thickened slightly. Remove from heat and set aside.

  3. Thread the assorted vegetables onto the soaked wooden skewers, alternating between different types for variety.

  4. Place the vegetable skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, or until the vegetables are tender and slightly charred.

  5. During the last few minutes of grilling, baste the skewers generously with the prepared Chili & Peach BBQ Sauce, turning them to coat evenly. Reserve some sauce for serving.

  6. Once the vegetables are cooked to your desired doneness and have a nice caramelized exterior, remove them from the grill and transfer to a serving platter.

  7. Serve the Chili & Peach BBQ Vegetable Skewers hot, drizzled with any remaining sauce and garnished with fresh herbs if desired.
