Tacos al Pastor

Tacos al Pastor is a beloved Mexican street food dish known for its flavorful marinated pork, cooked on a vertical spit (similar to shawarma), resulting in tender, juicy meat with crispy edges. Traditionally, the pork is thinly sliced and served in corn tortillas, topped with fresh pineapple chunks, cilantro, onions, and a spicy salsa made with hot chilies.

Ingredients:

  • 1 lb pork shoulder, thinly sliced

  • 1/4 cup pineapple juice

  • 3 cloves garlic, minced

  • 2 tablespoons achiote paste

  • 1 tablespoon chipotle in adobo sauce, chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Corn tortillas

  • Diced pineapple

  • Chopped cilantro

  • Diced onions

  • Salsa (preferably with hot chilies)

Instructions:

  1. In a bowl, mix together pineapple juice, minced garlic, achiote paste, chipotle, cumin, oregano, salt, and pepper to create the marinade.

  2. Add the thinly sliced pork to the marinade, ensuring it's evenly coated. Cover and refrigerate for at least 2 hours or overnight for best results.

  3. Preheat your grill or broiler to medium-high heat.

  4. Thread the marinated pork slices onto a skewer or vertical spit.

  5. Cook the pork on the grill or under the broiler, rotating occasionally, until it's cooked through and slightly charred, about 10-15 minutes.

  6. Once cooked, remove the pork from the skewer and chop into bite-sized pieces.

  7. Warm the corn tortillas on the grill or in a skillet.

  8. Assemble your tacos by filling each tortilla with the chopped pork, diced pineapple, cilantro, onions, and a spoonful of salsa.

  9. Serve immediately and enjoy the authentic flavors of Tacos al Pastor!
