Spectacular Spicy Mango Chicken with Habasco Hot Sauce!

This dish perfectly balances the heat of the Yellow Hot Sauce with the sweetness of ripe mangoes, creating a vibrant and mouthwatering meal. Perfect for a special dinner or to impress your guests with a burst of flavor and color!
Ingredients:
4 boneless, skinless chicken breasts
2 ripe mangoes, diced
1 red bell pepper, thinly sliced
1 red onion, thinly sliced
2 cloves garlic, minced
1 tablespoon olive oil
1/4 cup Yellow Hot Sauce (adjust to taste)
1 tablespoon honey
Juice of 1 lime
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Cooked white or brown rice (for serving)
Instructions:
Marinate the Chicken:
In a bowl, mix 1/4 cup of Yellow Hot Sauce, honey, lime juice, minced garlic, salt, and pepper.
Add the chicken breasts, ensuring they are well-coated with the marinade.
Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
Prepare the Mango Salsa:
In a separate bowl, combine the diced mangoes, red bell pepper, and red onion.
Season with a pinch of salt and a squeeze of lime juice.
Mix well and set aside.
Cook the Chicken:
Heat the olive oil in a large skillet over medium-high heat.
Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is fully cooked and has a nice golden-brown sear.
Remove the chicken from the skillet and let it rest for a few minutes before slicing.
Assemble the Dish:
Slice the cooked chicken breasts into strips.
Arrange a bed of cooked rice on each plate.
Place the sliced chicken on top of the rice.
Spoon generous amounts of mango salsa over the chicken.
