Pasta Salad with Cheatasco Sauce

Here's a basic recipe to try: Ingredients:

For the Pasta Salad:

  • 2 cups of cooked pasta (any shape you prefer)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, finely chopped

  • 1/2 cup black olives, sliced

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup fresh basil, chopped

  • Salt and pepper to taste

For the Cheatasco Sriracha Sauce:

  • 1/2 cup mayonnaise

  • 2 tablespoons Sriracha sauce (adjust according to your spice preference)

  • 1 tablespoon honey

  • 1 tablespoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste

Instructions:

1. Cook the Pasta:

  • Cook the pasta according to package instructions. Drain and let it cool to room temperature.

2. Prepare the Vegetables:

  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and fresh basil.

3. Make the Cheatasco Sriracha Sauce:

  • In a small bowl, whisk together the mayonnaise, Sriracha sauce, honey, Dijon mustard, minced garlic, salt, and pepper. Adjust the Sriracha sauce quantity based on your spice preference.

4. Assemble the Pasta Salad:

  • Pour the Cheatasco Sriracha Sauce over the pasta and vegetables. Gently toss everything together until well coated.

5. Season and Serve:

  • Season the pasta salad with salt and pepper to taste. You can also drizzle a bit more Sriracha sauce if you like it spicier.

6. Chill and Serve:

  • Cover the pasta salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld. This dish can be served cold.

7. Garnish (optional):

  • Before serving, you can garnish with additional fresh basil or a sprinkle of feta cheese.
