Ingredients:
1 large bag of Doritos (Nacho Cheese flavor)
250g ground beef
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1 small red onion, finely chopped
1 small tomato, diced
Fresh coriander, chopped
1 lime, cut into wedges
Salt and pepper to taste
Olive oil for cooking
1 cup milk
2 tablespoons butter
2 tablespoons flour
Instructions:
Prepare the Meat Mixture:
Heat a drizzle of olive oil in a pan over medium heat.
Add the ground beef and cook until browned, breaking it up with a spoon.
Season with salt and pepper to taste.
Make the Cheesy Sauce:
In a small saucepan, melt the butter over medium heat.
Stir in the flour and cook for about 1 minute.
Gradually whisk in the milk, stirring constantly until the sauce thickens.
Add the grated cheddar and mozzarella cheeses, stirring until melted and smooth.
Assemble the Nachos:
Preheat your oven to 180°C (350°F).
Spread a generous layer of Doritos on a baking sheet or ovenproof dish.
Spoon the cooked ground beef over the Doritos.
Pour the cheesy sauce evenly over the top.
Bake:
Place the tray in the preheated oven and bake for about 10 minutes, or until everything is heated through and bubbly.
Prepare the Toppings:
In a small bowl, combine the diced red onion and tomato.
Squeeze fresh lime juice over the mixture and toss gently.
Chop fresh coriander for garnish.
