Lamb Curry In A Bread Bowl

This Spicy Lamb Curry is a rich, flavorful curry served in a hollowed-out loaf of fresh bread. Tender lamb chunks simmer in a fragrant, mildly thick curry sauce, topped with sliced chili peppers for an extra kick. Paired with buttery bread pieces and a side of fresh onion and tomato salsa, this dish is a true South African comfort food with bold flavors and a satisfying, hearty texture.

Ingredients:
500g lamb (boneless, diced)
1 large onion (chopped) 1 cup chopped tomato
2 cloves garlic (minced)
2 red chili peppers (chopped)
2 tbsp curry powder
1 tsp garam masala
1 tsp salt (adjust to taste)
1 cup water or broth
2 tbsp oil
½ loaf white bread (unsliced, cut into halves or quarters)
Instructions:
- Heat oil in a pot over medium heat. Add onions and sauté until soft.
- Add garlic and chili peppers, stir for 1 minute.
- Add curry powder, garam masala, and salt. Stir through for another minute. (The flavour of the Curry powder needs to develop before adding meat or liquids) - Add lamb. Cook until browned.
- Add tomatoes and stir for around 2 minutes. - Pour in water or broth and let it simmer for 30-40 minutes until the lamb is tender. Add more liquid if needed.
- Cut out the center of the bread to make a hollow "bowl" while keeping the soft inside to eat with the curry. (You can also use a mini loaf like we did in the pic)
- Spoon the hot lamb curry into the hollowed bread and serve immediately.
Tip: For extra thickness, add 1 tbsp flour or mashed potatoes to the curry!
