Kimchi Fried Rice Recipe


Kimchi Fried Rice is a beloved Korean dish that transforms simple ingredients into a flavorful and satisfying meal. Made with cooked rice stir-fried with tangy kimchi, aromatic vegetables, and seasoned with soy sauce and sesame oil, this dish bursts with umami goodness and a hint of spice. Topped with a fluffy layer of scrambled eggs, it's a hearty and comforting dish that's perfect for any meal of the day.

Ingredients:

  • 2 cups cooked rice (preferably day-old)

  • 1 cup kimchi, chopped

  • 2 tablespoons kimchi juice

  • 2 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 carrot, diced

  • 2 green onions, chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon sugar

  • 2 eggs, lightly beaten

  • Salt and pepper to taste

  • Sesame seeds (for garnish, optional)

Instructions:

  1. Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and chopped onion, and sauté until fragrant and onions are translucent.

  2. Add diced carrot and chopped kimchi to the skillet. Cook for about 3-4 minutes until the carrots are tender.

  3. Stir in the cooked rice, breaking up any clumps, and mix well with the kimchi mixture.

  4. Pour in the kimchi juice, soy sauce, sesame oil, and sugar. Stir to combine and let the flavors meld for 2-3 minutes.

  5. Push the fried rice to one side of the skillet. Pour the beaten eggs into the other side and cook until set, scrambling them slightly.

  6. Once the eggs are cooked, mix them into the fried rice until evenly distributed.

  7. Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds if desired.
