Ingredients:

  • 8 large jalapeños

  • 120g cream cheese, softened

  • 1/2 cup shredded cheddar cheese

  • 4 slices of crispy bacon, crumbled

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt and pepper to taste

  • 1/4 cup breadcrumbs (optional, for crunch)

  • 2 tbsp grated Parmesan (optional)

Instructions:

  1. Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.

  2. Prepare the jalapeños:

    • Slice the jalapeños in half lengthwise and remove the seeds and membranes (for less heat). If you want them spicier, leave some seeds.

  3. Prepare the filling:

    • In a bowl, mix the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until well combined.

    • Fold in the crumbled crispy bacon.

  4. Fill the jalapeños:

    • Spoon the cream cheese mixture into each jalapeño half, spreading it evenly.

  5. Optional Crunch:

    • If using breadcrumbs, sprinkle a small amount on top of the filling for added crunch. Add a little grated Parmesan on top if desired.

  6. Bake:

    • Place the stuffed jalapeños on the prepared baking sheet.

    • Bake for 15-20 minutes or until the jalapeños are tender, and the filling is bubbly and golden brown.

  7. Serve:

    • Let them cool slightly before serving.
