Grilled Cheese with Jalapeno, Onion, and Spinach

This upgraded grilled cheese sandwich combines the classic comfort of melted cheese with the zing of jalapeno slices, the sweetness of caramelized onions, and the freshness of spinach. It's a flavorful twist on a beloved favorite, perfect for a satisfying lunch or a quick dinner option!
Ingredients:
4 slices of your favorite bread (sourdough works well)
1 cup shredded cheese (cheddar, mozzarella, or a blend)
1 jalapeno pepper, thinly sliced
1 small onion, thinly sliced
Handful of fresh spinach leaves
Butter or margarine for spreading
Instructions:
Heat a skillet or griddle over medium heat.
Spread butter on one side of each slice of bread.
Place one slice of bread, butter-side down, on the skillet.
Layer shredded cheese, jalapeno slices, onion slices, and spinach leaves on top of the bread.
Top with another slice of bread, butter-side up.
Cook until the bottom bread slice is golden brown and the cheese begins to melt, about 2-3 minutes.
Carefully flip the sandwich and cook until the other side is golden brown and the cheese is completely melted, about 2-3 more minutes.
Remove from the skillet and let it cool slightly before serving.
