Ingredients: 5 chicken breast fillets
salt and pepper
juice and zest of 1 lemon
250 g mushrooms, sliced
Oil
200 g of spinach
3 eggs, beaten
250 g smooth cottage cheese
250 ml grated mozzarella or cheddar cheese
Method:
1. Preheat the oven to 180 °C.
2. Grease an ovenproof dish.
3. Season the chicken with the salt, pepper, lemon zest.
4. Place in a steamer and steam for 57 minutes until cooked.
5. Pull chicken apart into fine pieces.
6. Fry the mushrooms in a little oil until just soft.
7. Add the spinach and heat until the spinach has wilted.
8. Beat the eggs and cottage cheese together.
9. Lightly mix the chicken and vegetables with the cottage cheese mixture and spoon into the prepared bowl. sprinkle over the cheese and bake for 30-40 minutes or until the egg has set and the cheese has melted.
Serve with salad and drizzle with Creamy Peri Peri or Smoked Jalapeno for some kick.
