Buffalo wings are a tasty treat that are both easy and delicious. By adding a little hot sauce to your regular wings, you bring a whole new level of flavour! Your friends will love these crispy, spicy wings with their touch of zing!
Preparing the chicken: 2kg Chicken wings 5 teaspoons baking powder 1/2 teaspoons salt
Method:
Pat dry the wings with some kitchen paper and toss in a bit of baking powder. The baking powder draws the moisture out during baking which ensures that your chicken remains nice and crispy. (You will not taste the baking powder in the finished dish)
Place on a baking sheet, skin side up. Putting the chicken on a grid on the sheet ensures that the fat can render, drip into the tray and the chicken does not stick to the bottom of the sheet.
Bake on 120 degrees for about 20 minutes and then another 20 minutes on 220 degrees to make the wings really crisp up. The wings do not need to be turned over. They are ready when dark golden brown and the skin is very crispy.
Marinade:
4 tablespoons butter
100ml Cheatasco Hot Sauce
1 tablespoon brown sugar (optional)
2 tablespoons lemon juice
1/4 teaspoon salt
Method:
Melt the marinade ingredients together. Toss the chicken wings in the marinade. Make sure to cover all areas well. Fry in a hot pan for around 5 minutes (no oil needed). Stir regularly as it might stick to the pan.
Serve: Serve hot or cold with your choice of sides and loads of napkins!
