Bruschetta with Crushed Chili Atchar

Ingredients:

  • For the Bruschetta:

  • 1 baguette, sliced into 1/2-inch thick slices

  • 2-3 cloves garlic, peeled and halved

  • 3 tablespoons olive oil

  • Salt to taste

  • For the Topping:

  • 2 cups cherry tomatoes, quartered

  • 1/4 cup fresh basil leaves, finely chopped

  • 1 tablespoon olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste

  • 1/2 cup crushed chili atchar


Instructions:


Prepare the Bruschetta:

  • Preheat the oven to 400°F (200°C).

  • Arrange the baguette slices on a baking sheet.

  • Brush each slice with olive oil and sprinkle lightly with salt.

  • Bake in the preheated oven for 8-10 minutes, or until the bread is golden and crisp.

  • Remove from the oven and immediately rub each slice with the cut side of the garlic cloves. Set aside to cool slightly.


Prepare the Topping:

  • In a medium bowl, combine the quartered cherry tomatoes, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well.

  • Let the mixture sit for about 10 minutes to allow the flavors to meld.


Assemble the Bruschetta:

  • Spoon the tomato mixture onto each toasted baguette slice.

  • Top with a small spoonful of crushed chili atchar.

  • Garnish with additional basil leaves if desired.


Serve:

  • Arrange the bruschetta on a serving platter and serve immediately.
