Bruschetta - What do you do with leftover bread? 😁

Now in our house there is no such thing as leftover bread, because what else will hubby have for lunch when he's finished making chilli atchar? 😜


Today, we had our bread that we baked yesterday... Have you noticed how Sasko and Sunbake and Blue Ribbon all seem to have "rushed" bread? It doesn't seem to be cooked through, so we like to bake our own when we can.


To make your bruschetta you need some olive oil, garlic and butter. We melt the butter and mix it through with the olive oil and garlic. Take you slices of bread and brush them with the oil/butter mixture.

Place them on the baking tray and pop them in the oven under the grill to toast.


About halfway ready, we add some cheese, tomatoes and off course chillies on top and back under the grill.


Top with your favourite spices.


Traditionally, bruschetta will be made with Roma Tomatoes, basil and mozarella cheese. It is used mostly as an appetizer and is a great hit on platter and at cocktail parties.


We served ours as an appetizer for the spaghetti tonight.
